Arrangements (dough)

Mix the flour, water and salt, knead the dough for 5 minutes and let it rest between 2 to 12 hours. Cover it with plastic.

Cut the spring onions and mince the garlic and ginger.

Mix the vegetables with the minced meat, soy sauce, sugar and salt, and mix it by stirring it at the same direction in circles until it looks homogeneous and you can see the meat threads.

Make the sklin

Put flour everywhere. Get a piece of the dough and knead it in a churro-like shape. Then, cut it into small pieces. Take one piece, squash it with your hand. Flatten it with the Chinese rolling pin appropriately (roll until half of the skin, turn 90 degrees and repeat, so that the borders are thinner than the center). Finally put the filling inside and close it nicely. It probably helps to put flour in your fingertips.

Prepare the sauce

Mix the chopped spring onion and the chili flakes. Heat the olive oil in a pan until it starts burning, and pour it into the bowl with the spring onions and chili. Finally, add the soy sauce, vinegar and water.

Cook the dumplings

Probably the best way to cook them is to steam them, but boiling them is also fine. Warm water and put them into the pot. When they start floating it means that they are cooked. To avoid the bubbles breaking the dumplings, pour cold water whenever it starts boiling too much.
