Clean the konbu and shiitake with a wet towel carefully.

Put the konbu and shiitake in the water for about 3 hours. If it's longer, it's also fine.

Simmer for 20 minutes. Take the konbu out, and keep simmering for 10 more minutes. It is important that it doesn't boil, so keep it in low-medium heat.

Remove the scum if any, and if possible, strain the broth with a さらし布 (coffee filter-like paper).
